Sunny-Sunny Corn Muffin

1 cup cornmeal

1 cup all-purpose flour

1/2 cup sugar

4 teaspoons baking powder

1 egg

1/2 teaspoon vanilla

1 cup milk(or 1 10-oz. can creamed corn)

1/4 cup vegetable oil

 

mix dry ingredients together. Add egg, vanilla, milk, or creamed corn and egg. Beat just until smooth, approximately 1 minute(please don't be silly and overmix). Pour batter into a greased 8-inch square pan or greased muffin tin. Bake at 350 degrees for approx 20-25 minutos.
